Trying to think what to make for our International Food Cook Off in October during Customer Service week. It has to be a main dish, appetizer, or dessert, so no side dishes. That rules out my Athenian Green Beans. So far, the only thing I can think of is my Great Goulash Paprikash because it is easy, and cheap to make. Maybe the Tuscan Chicken and Beans? Equally easy and cheap, even if the recipe has to be increased. But honestly, I just don't know. I should be able to think of something better.

Yeah, the cook off is at work. The Tuscan chicken and beans is kind of like a stew...a one pot meal with bite size chicken, white beans, sun-dried tomatoes, and a few other seasonings.

Well, that would fit, but I had thought it would be better to do something I am familiar with. Plus, I have to make a ton of it, and don't know if the budget would be accomodating enough. Perhaps if we could get together on one of my days off, once Chas is better, we might be able to make them together and I could see if they'd be good to bring (easy enough and cheap enough!). The cook off is in the first week of October.

Sounds great! Let me know when you would like to make them....I know Mondays are generally free for you, right? Monday would be a great day for me, in general. (Just let me know which one!) I can even bring over some new tools that will help us with the recipe.

I am off Sundays and Mondays. I learned that the Athenian Green Beans would be accepted, so I replied saying I would bring either the Great Goulash Paprikash, Tuscan Chicken and Beans, Athenian Green Beans, or Dim Sum Dumplings with Plum Sauce (or if I fthought of something else) just so I could register participating. The organizer thought it all sounded good. I still hesitate with the goulash as it is Eastern European, and maybe not as widely accepted as Mediteranean or Asian. I like it, but the flavor can be mild and subtle.

BTW, Saundra has an order, and a few others, but I barely saw her tonight to get them, so I will have to wait (though I asked the overnight manager if she sould email to me).

I want to cook more, though with my current schedule, it is kinda hard. My cooking days are Sunday and Monday now. I'd love to have the kids help with the cooking too.

I am glad I could help. I have been there, and appreciated the help when I got it. I hope you also like your gift.

Chas IS feeling better. The darvoset began to work on Sunday, and he is cutiing the dosage back now.

Have you ever had either? They're both good, easy, cheap, and healthy. I'll show you how to make them sometime. :)
