19 June 2007 22:50So, I left work early to go to the hospital where my dear friend was admitted earlier and she needed me. And I needed to see her after I heard what had happened. So sad for her.
Left the hospital a few hours later, came home in the rain, and did not know what to make for dinz. And Chas out at a meeting where there was food, and he would not be home for a bit. But in the end I grabbed a few things from the fridge with an impromptu idea. I took the last small bit of cooked Goya Spanish rice (the yellow kind) I had, the last 2 eggs I had, a potato, last bit of butter (replaced with stick from freezer though) and Adobo seasoning from Goya. I washed and cleaned the potato, and sliced in small cubes, and boiled in water til a knide tip went through easy enough. I drained the water, added the butter and sprinkled the adobo seasoning and mixed, then let it cook in the pan on medium heat. Once nicely browned, I removed from the pan and added the leftover cooked rice and stirred in the remaing butter mix to heat, and transfered to a plate. I topped the rice with the cooked potatoes, and cracked the 2 eggs to cook in the pan. When done, I added the eggs to the top of the rice and potatoes.

Date: 20 Jun 2007 04:22 (UTC):) I really like spanish rice, or any rice for that matter ha. I'd like to have you cook for me. :) I've had jumbo size eggs before and those were quite big but so good.

Date: 20 Jun 2007 05:07 (UTC)This was so easy to make, I tell you. Of course it was easier that I had the leftover rice. I was not about to cook a detailed meal. If you took a whole box of the rice, obviously you would increase the number of potatoes and eggs. :)

Date: 20 Jun 2007 05:26 (UTC)hehe sometimes simple things taste good! ha, rice can be difficult sometimes, we have one of those rice cookers which help a lot, i always liked hot sauce on my eggs haha. We go through sooo much rice it is crazyness. :)
