I'm special! Yes, me! I got chosen to do a "special project" at work today. In all actuality it was lame, but I was off the phones for almost 2 hours. Probably a good thing since my moods can be "iffy" around that time of the month, which for me is now. Sigh...
I made a good and simple dinner tonight; everyone who had it thought it was good. It was also easy to make.
Greek Lamb and Orzo
I got the recipe from a website but I modified it to my liking. It is kind of like Hamburger Helper, but knowing what you are putting into it and eating. :)
Ingredients:
1 lb ground lamb or beef
1 small onion, finely chopped--about 1 cup chopped
1 cup of orzo (rice shaped pasta)
1 28 oz can of crushed tomatoes in liquid
1 TBS olive oil
Greek seasoning
Feta cheese for garnish
Steps:
Cut the onion and chop finely. I used a small food chopper to do it until it was finely chopped. Heat a little olive oil in a 10" skillet (or 2 qt saute/chef's pan or skillet) and add onion. (I used my 2 qt chef's skillet which is 9 " in diameter, and this came almost to the top of it...had to be careful stirring.) Cook on medium, heat until softened and translucent; a few minutes. Remove from the pan and set aside. (The original recipe called for celery to be used, but I don't like it much so I subbed it with the onion instead.)
If necessary, add more oil to pan and add meat to brown on medium-high. Cook until no longer pink and drain any grease.
Add onions, orzo, and tomatoes to meat in the pan and stir to mix. Add Greek seasoning (including salt and pepper) to taste. NOTE: "Greek seasoning" is available in grocery stores but if you don't have it you can use oregano, cumin, cinnamon (very small amount...a pinch at most), and red pepper flakes. I did not measure it, sorry. Start out small and add more if like as you go...just add it to taste.
Bring mixture to boil, cover and simmer until orzo is cooked and most of tomato liquid is absorbed, about 10-15 minutes. Serve mixture with a garnish of the feta crumbles. Salad and garlic bread go well with this too.
In other news, we are going to see Interpol and Elefant Friday night! Yay! We got our tickets from Park Ave Cds tonight. My ticket was a late birthday gift from
shyystarr, and I picked up the Elefant single, but to my disappointment, the cd was missing from inside, and it was a closed package. Boo. But I will take it back tomorrow and see if they can fix it for me, though I think this was the last single. We'll see.
I am very tired now, I am going to bed now. Zzzzzzzzzzzz....
